- 2 chicken breasts, boneless and skinless
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4 cups chicken broth
- Fresh parsley, chopped (for garnish)
Instructions: How to Cook Chicken And Farro
- Season the chicken breasts with salt and pepper.
- In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 4-5 minutes per side. Remove the chicken from the pot and set aside.
- Heat the remaining tablespoon of olive oil in the same pot. Add the onion, garlic, carrot, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the farro, thyme, and rosemary to the pot. Stir to combine with the vegetables.
- Pour in the chicken broth and bring to a simmer. Return the chicken breasts to the pot.
- Cover and cook for about 20-25 minutes, or until the farro is tender and the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks.
- Return the shredded chicken to the pot and stir to combine with the farro and vegetables.
- Season with additional salt and pepper if needed.
