- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup plain yogurt

- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon cumin seeds
- 4-5 green chilies, slit
- A handful of fresh cilantro leaves, chopped
- A handful of fresh mint leaves, chopped
- Salt to taste
- 3 tablespoons ghee (clarified butter)
- 2 tablespoons vegetable oil
- 2 cups water
Instructions: How to Cook South Indian Chicken Biryani
- Wash the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
- In a large bowl, marinate the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 30 minutes.
- Heat ghee and oil in a large pot over medium heat. Add cumin seeds and sauté until fragrant.
- Add the sliced onions and green chilies. Cook until the onions turn golden brown.
- Add the marinated chicken pieces and cook until the chicken is browned on all sides.
- Stir in the chopped tomatoes, garam masala, cilantro, and mint leaves. Cook for a few minutes until the tomatoes are soft.
- Add the soaked basmati rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and the chicken is tender.
- Fluff the biryani gently with a fork. Serve hot with raita or your favorite side dish.
