- 2 tablespoons red wine vinegar

- 1 red bell pepper, sliced

- 2 tomatoes, sliced
- 3 cloves garlic, minced
- 1 tablespoon vegetable oil

Instructions: How to Cook Chicken Saltado
- In a bowl, combine the soy sauce, red wine vinegar, cumin, paprika, salt, and pepper. Add the chicken strips and marinate for at least 15 minutes.
- Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned, about 5-7 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add a bit more oil if needed and sauté the onions, bell peppers, tomatoes, and garlic until softened.
- Return the chicken to the skillet and stir to combine with the vegetables. Cook for an additional 2-3 minutes.
